I mentioned a few weeks ago on that I am in a freezer meals club once a month. I am loving trying new recipes and although I won’t remake all of them, we have found a few keepers. I want to pass on the goodness so if one stands out, I’ll be sharing it with you.
1 pound ground turkey
30 oz black beans
1/2 cup salsa- mild
1 tablespoon chili powder
16 oz. chicken broth
1/2 cup cheddar cheese, shredded
5 tablespoons sour cream
2 1/2 tablespoons cilantro, fresh
1. Brown turkey and then drain.
2. Bag the meat, salsa, beans, chili powder and broth together. Freeze.
3. Bag separately: sour cream, cilantro, cheese. Refrigerate.
1. Heat and serve. Garnish with sour cream, cheese and cilantro.
Best served with tortilla chips or cornbread.
This is my favorite meal so far. We have already made it again and my whole family eats it. It is healthy, delicious, filling and pretty inexpensive to make- not to mention easy!
*I take no credit for this actual recipe. It was given to me at Hy-Vee in our freezer meal class and I am only sharing it as a family favorite- not an original recipe.
